KETO BACON SPINACH RICOTTA BLINTZES

Recently, we created a number of different crepes and blintzes by using this Cauliflower Egg Thins which we found at Costco. It appears that some Walmart’s have them too. They’re versatile, but thin, so they can tear easily, however they taste delicious.

One of the great aspects of them is that they don’t possess a strong flavor on their own. As you open up the packaging they have a distinct cauliflower smell to the package, which is to be expected however it is gone once they’ve been warmed up a bit. KETO BACON SPINACH RICOTTA BLINTZES

INGREDIENTS

Cauliflower Egg Thins

1 Cup Fresh Spinach

1/2 Cup Mozzarella Cheese (Shredded)

1/2 Cup Parmesan Cheese (Shredded)

2 Slices Uncured Bacon (Chopped)

6 Ounces Ricotta Cheese (Whole Milk)

2 Tablespoons Dried Minced Onions

2 Teaspoons Minced Garlic

1 Teaspoon Dried Oregano

1/4 Teaspoon Pink Himalayan Salt

1/4 Teaspoon Black Pepper

INSTRUCTIONS

In a large Frying Pan over Medium-High Heat Cook 2 pieces Uncured Bacon to desired crispness.

Keep this Bacon Grease for cooking in the next steps.

On Medium Heat, add 1 cup of fresh Spinach and sprinkle by adding two Tablespoons dried Minced Onions and 2 Teaspoons Minced Garlic as well as one Teaspoon of dried Oregano.

Cook and stir until spinach is fully cooked, then add the 6 Ounces Ricotta cheese, 1/4 cup Mozzarella Cheese, 1/4 cup Shredded Parmesan cheese, and then sprinkle by adding 1/4 teaspoon pink Himalayan salt as well as 1/4 teaspoon Black Pepper.

Mix all the ingredients in a cooking pan until they are evenly combined, then take it off the the heat.

Then, warm the Cauliflower Egg Thins in accordance to the instructions on the package, then fill them with your Ricotta mix and the Spinach.

Roll them up and sprinkle them with the rest of the 1/4 Cup Mozzarella Cheese 1/4 Cup Parmesan Cheese that has been shredded and chopped Bacon.
