When you think about a Chowder, you’re likely thinking of the traditional Clam Chowder or Corn Chowder, but rarely have I had a good, rich Ham Chowder. This creamy Ham Chowder ticks off numerous flavor points and will fill your stomach. With a few minutes of preparation, it’s one of the fastest and easiest Keto meals.

If you’d like to have your Cauliflower chunks replicate the soft potato bite more like rice than potatoes, then I recommend you cut the stalks of Cauliflower into pieces of 1/2 inch instead of greasing the florets. This would create a similar texture to potatoes that people might think of from a classic soup recipe.

Similar to our Cheesy Broccoli Cheese Soup recipe, you can decorate this with bacon pieces chopped up and additional chopped Cheddar Cheese.

INGREDIENTS

2 Uncured Ham Steaks

2 Cups Cheddar Cheese (Shredded)

2 Cups Cauliflower (Grated)

2 Cups Water

1 Cup Heavy Whipping Cream

4 Tablespoons Grass-Fed Butter

1/8 Cup White Onion (Diced)

2 Medium Celery Stalks (Diced)

1 Medium Carrot (Diced)

1 Teaspoon Pink Himalayan Salt

1 Teaspoon Black Pepper

1 Teaspoon Xanthan Gum (Optional)

INSTRUCTIONS

Begin by preparing your ingredients. This will include cutting into the White Onion, Celery Stalks, Carrot, and Uncured Ham Steaks. Then Shred the Cheddar Cheese, and Grate the Cauliflower.

In a large Sauce Pan over Medium-High Heat, melt 2 Tablespoons Grasses-Fed Butter.

Incorporate the 1/8 Cup White Onion, Diced 2 diced Celery Stalks Diced Medium Carrot, and sauté until they are tender.

When the other vegetables become tender, mix 2 cups of grated Cauliflower to stir to eliminate any drippings that may have escaped from the pan.

Add 2 cups of Room Temperature water and 2 more Tablespoons of Grasses-Fed Butter.

Season by adding Season with 1 Teaspoon Black Pepper and 1 Teaspoon Pink Himalayan Salt.

Bring to the point of boiling, then slowly pour into 1 cup of Heavy Whipping Cream.

Sprinkle in 2 Cups of Shredded Cheddar Cheese, Then stir to melt it into the chowder.

Then add the two uncured Ham Steaks, and mix all ingredients before adding the option of 1 teaspoon of Xanthan Gum (Used to thicken the dish).
